Passion-fruit Vanilla Slice

This is a much requested dessert in our home and for parties. It is quick and straightforward to prepare, with basic ingredients. It can be prepared without the passionfruit, as a plain vanilla slice but this is our favourite version.

I have made this in bulk for youth camps and it is easy to cut into various portion sizes.

You can adjust the thickness of the custard layer by which pan you use to assemble the slice. We prefer it to be fairly thin rather than the huge thickness you often get in a cafe.

Description

Tasty, quick and easy custard slice with fresh or canned passionfruit.

Ingredients
    Base and Filling
  • 250 grams Sao Crackers (square, non-salted)
  • 1/2 cup Caster sugar
  • 1/2 cup Custard powder
  • 1 1/2 cup Cream (Double)
  • 2 to 2 1/2 cups Milk
  • 1 teaspoon Vanilla essence
  • 2 Passion-fruit (fresh, or 1 small tin)
  • Icing
  • 2 cups Icing Sugar
  • 1 teaspoon Butter
  • 1 teaspoon Vanilla essence

    Base and Filling
  1. Base

    Line an oven proof tray with baking paper or silicone. I use a sponge roll tin (30cm long x 24cm wide x 3cm deep). 

    Place a single layer of crackers on the paper. Reserve the rest of the crackers to place on top of the custard.

  2. Filling

    Place sugar, custard powder and cream into a medium large saucepan. Mix thoroughly and then stir over a medium heat until it starts to thicken.

    Add the milk 1/2 cup at a time and whisk continuously until the custard is thick and smooth. It will thicken more on standing so don't make it too thick.

    Remove from heat, stir through half the passionfuit and leave to cool for about 10 minutes.

    Slowly pour custard over the crackers, being careful not to displace the crackers.

    Lay the rest of the crackers over the top in a single layer. Place in fridge while preparing the icing.

  3. Icing

    Place icing sugar, butter, vanilla and the remainder of the passionfruit pulp into a bowl. Add enough hot water to make a medium textured  icing.

    Spread icing over the slice and refrigerate for about 3 hours, until well set.

    Slice as desired and serve. Keep leftovers in an airtight container in the fridge.

Note

This recipe can of course be made as plain vanilla slice by omitting the passionfruit.
