These are a quick way of adding baked potatoes to a meal, without the time it takes to bake whole potatoes. I’ve been making them for many years, but don’t know anyone else who does them this way. I think the original recipe came from Alison Holst, a Kiwi cookbook and cooking show guru of the 1960’s to 90’s. She became very popular in New Zealand for her practical, everyday recipes and put out multiple best-selling cookbooks.

They make a great accompaniment to a variety of meat or vegetarian meals.

Tips for good results

I use a biscuit tray lined with a silicon sheet or some baking paper. Try and have the potatoes roughly the same size.

Remove them from the tray as soon as they come out of the oven, so they don’t become soggy

Halved Baked Potatoes

These halved potatoes bake up in 40 mins and are soft on the inside with a crispy top. Perfect as an accompaniment to most meals.

  1. Preparation

    Turn oven to 180C fan bake or bake setting.

    Line a large biscuit tray with a silicone sheet or sheet of baking paper.

    Wash and dry the potatoes.

    Slice each potato in half lengthwise. Place cut side down onto the prepared tray.

    Put in the preheated oven and bake for about 45 mins. 

    Test for softness, by pressing slightly on the top of a potato. If it gives a little, then it is cooked, if not give it another 5 mins, then test again.

Note

Serve alongside any accompaniment, either vegetarian or meat. 

Very nice with quiche/pie and salad.
